Spina Salumi’s soppressata is a typical product from Molise made from a mixture of lean first-cut meat: fillet and ham.
A sausage with a flattened parallelepiped shape and a smooth, dry and compact surface. Externally it is brick red in colour with whitish shades of typical vegetative mycelium.
Internally, when cut, the surface is bright red in colour, balanced by the presence of the fat parts inside.
