Sausage with an elongated cylindrical shape with a smooth, dry and compact surface. Externally it is brick red in colour with whitish shades of typical vegetative mycelium. Internally, when cut, the surface is pinkish tending towards red. Balanced presence of fat parts inside. Unmistakable and characteristic aroma, intense aroma of a typical seasoned and spiced product.
Typical product from Molise consisting of a mixture of selected meat: shoulder, ham and bacon.
